Kovakkai /Tindora Fry (Ivy gourd)

An easy preparation for kundru/tindora is in this guest post from Nutmeg.

 Prep & Cooking Time: 25 minutes   serves: 4-5

 Ingredients:

  1. Kovakkai/Tindora /Ivy gourd – 250 grams/ 50 nos.
  2. Chilli Powder – 2 ½ tsp
  3. Coriander Powder – 1/2 tsp
  4. Salt to taste
  5. Oil – 10 tsp
Seasoning:
1.      Mustard seeds -1/2 tsp
2.      Cumin seeds  - 1/2 tsp


Method:
    
  1. Wash and cut the kovakkai lengthwise.


  1. Microwave the kovakkai in a zip lock steamer bag for 4-5 min.(Or can cook directly by adding water, but it takes a little longer)



  1. In a frying pan, add oil, mustard, and cumin seeds and wait till it splutters, then add the kovakkai and stir for 3 mins, then add chilli powder, coriander powder, salt and mix well.

  1. After mixing everything, fry for another 10 minutes on a low flame.



Spicy Kovakkai is ready to taste!
